May is an idyllic time to be in Tuscany, when the spring has fully sprung and the air is balmy and warm, perfumed with the scent from brilliant yellow ginestra flowering everywhere, the rolling hills dotted with grazing sheep and the wheat fields and vines lush and green again

crostini ai fegatini- iconic tuscan appetizer of toasted bread slathered with cooked chopped chicken livers mashed with capers, lemon & rosemary

pappardelle verde al pomodoro e ricotta-  wide cut spinach noodles with tomato sauce and fresh ricotta

arista- tuscan pork loin slow roasted with rosemary, sage, garlic and wild fennel pollen a dish cooked in Tuscany since at least the 11th century and possibly longer
