this final night we are going to go all out & feature all the offal we could find in persian cooking

menu of lamb offal and odd bits

sabzi khordi- herbs, spiced feta cheese, walnuts, radishes & flat bread

mast-o khiar- persian shallot yogurt

sambuseh- lamb sweet breads, heart & spleen in crispy filo w/ coriander tomato sauce, nigella seed

jigar- marinated lamb liver skewers w/ basil & lime

Khorak-e Zaban-poached lambs tongue w/ saffron sour cream sauce 

Khorak-e maghz-herb & egg batter fried sheeps brains

herb polo & tahdig

Kidneys gholveh -lamb kidneys sauteed w/ butter, tarragon & lime

kaleh pacheh braised sheep head & shanks w/ chick peas, meat broth & bread
